This one pot pasta is ready under 30 minutes with flavor that tastes like it took hours to make! It really can't get any simpler -- everything in the pot, cook till pasta is done and dinner is ready. The sauce and pasta cooking together helps infuse the flavors into the pasta from the sauce. This will quickly become a go-to recipe for any occasion!
Ingredients:
12 ounces of linguine
12 ounces of cherry or grape tomatoes, halved or quartered
1 onion, sliced thinly (about two cups)
4 cloves of garlic, thinly sliced
1/2 teaspoon red-pepper flakes
2 sprigs of basil, plus torn leaves for garnish (1 teaspoon of dried works as well)
2 tablespoons extra-virgin olive oil
Salt and pepper
4 1/2 cups water
Grated Parmesan cheese for serving
Directions:
Step 1
Combine pasta, tomatoes, onion, garlic, red pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and tuning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
Step 2
Season to taste with salt and pepper and garnish with basil. Serve with Parmesan.
